Creamy Cashew Avocado Smoothie

I have a new food obsession that’s begun to take over my life. And it comes in the form of cashews.

It all started when I was searching for a creamier version of almond milk to use in my matcha lattes. (Here’s the matcha that I use and love)

I had heard amazing things about cashew milk, so I figured I would give it a try. And friends, I’ve never looked back. My husband is even obsessed with it’s creamy texture and nutty taste.

So, when my dad told me he had a cashew and avocado smoothie at a Vietnamese restaurant, I knew it was as sign that I needed to recreate this delicacy myself.

So my Creamy Cashew Avocado Smoothie was born.

I hesitate to even call this a smoothie. It really has a consistency closer to pudding. You will be so pleasantly surprised at the creaminess and fluffiness of this smoothie.

It tastes like a dessert, not a health food. But with the healthy fats from the cashews and avocados, and the antioxidants from the blueberries, this smoothie is most definitely a health food. One that’s conveniently disguised as a dessert.

And although this recipe uses frozen blueberries, really any frozen fruit would work well in their place. The cashew and avocado base is what provides the heavenly texture, so get creative with the rest and let me know what you come up with!

Creamy Cashew Avocado Smoothie


  • 1/4 cup of raw cashews

  • 1/2 cup organic frozen blueberries (can be substituted for any frozen fruit)

  • 1/2 medium avocado

  • 3/4-1 cup of cashew milk (depending on how thick you like your smoothies)

  • 1 medium date


  1. Add all ingredients to a high-speed blender.

  2. Blend for 1-2 minutes or until all cashew pieces are gone. (You may need to add more milk if everything isn’t blending properly)

  3. Pour into a glass or a bowl and top with your favorite smoothie toppings (or just enjoy as is!).
