Chunky Paleo Granola

Chunky granola is the key to my husband’s heart. One of his favorite meals is an entire bag of granola dumped in a large tub of yogurt. There aren’t any veggies, but he could be eating a burger and fries, so I’m totally on board.

I used to get him various brands of granola at the store, but they were always filled with way too much sugar and strange fillers. And when you eat an entire bag at one time, that sugar can add up.

So, I set out to develop a Paleo granola that was chunky and flavorful, but not full of sugar and grains.

I’ll just say, this granola was a big hit! The chunks are epic, the flavor is great, and it’s 100% grain free and only contains a small amount of natural sugars.

My favorite part of this recipe is the almond butter. It gives the granola such a unique flavor plus it contributes to those amazingly coveted chunks!

Chunky Paleo Granola

Ingredients:

  • 3 cups of mixed nuts, chopped (I like some combination of almonds, walnuts, pecans, and cashews)

  • 1/3 cup almond butter

  • 1/2 cup chia seeds

  • 1 cup shredded coconut

  • 1/4 cup coconut oil

  • 1/3 cup honey

  • 3 tsp cinnamon

  • 1 tsp salt

  • 2 tsp vanilla

Instructions

  1. Chop the mixed nuts into small to medium pieces, depending on how chunky you want your chunks of granola to be, and pour them into a large bowl.

  2. Combine the almond butter, chia seeds, shredded coconut, coconut oil, and honey with the nut mixture and mix well.

  3. Add the cinnamon and salt a mix well.

  4. Spread the granola evenly onto a baking sheet covered with parchment paper.

  5. Bake at 325F for about 22 minutes. Check the granola periodically to make sure it doesn’t burn.

  6. The granola will look like a giant blob when you take it out of the oven, but that’s perfect - it’s how it gets chunky when it cools. So, let the granola cool completely, and then break it into chunks and store it in a mason jar.
