Fluffy Paleo Chocolate Chip Cookies

Y’all, these are the cookies of my dreams – they’re fluffy, and they’re paleo, and they’re chocolate chip cookies, and I just can’t get enough of them.

I was craving chocolate chip cookies one night. But not just any chocolate chip cookie, a fluffy, chewy chocolate chip cookie that was still going to fit into my gut healing lifestyle.

I started to search for Paleo cookie recipes, but then I figured I could just make them myself.

It took a few tries to get to just the right texture and level of sweetness (I don’t like my cookies overly sweet), but trust me, you’ll never make another chocolate chip cookie again!

I they’re super chewy, almost reminiscent of an oatmeal cookie. But they’re also fluffy and just melt in your mouth.

Our favorite way to eat them is straight off the pan dunked in cashew milk to cool them down. But, if you enjoy being civilized, letting them cool for a bit is completely acceptable too.

These cookies feature my favorite flour, Tigernut Flour. Tigernut flour is great because it’s actually not a nut, so it’s completely AIP and allergen friendly.

This flour is also a great source of prebiotic fiber. And if you know me you know I love to keep my gut bugs well fed with plenty of prebiotics!

So now that we’ve established that these fluffy paleo chocolate chip cookies are basically a health food, here’s the recipe! Try not to eat them all at once…

The Fluffiest, Chewiest Paleo Chocolate Chip Cookies

Ingredients:

  • 1/2 cup cassava flour

  • 1/2 cup tigernut flour

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 1/2 cup coconut oil

  • 1/4 cup coconut sugar

  • 1/4 honey

  • 2 tsp vanilla

  • 1 tsp apple cider vinegar

  • 1 egg (or 1 flax egg)

  • 1 ounce (4 squares) 100% cocoa baking chocolate

Instructions:

  1. Preheat the oven to 350F and line a cookie sheet with parchment paper.

  2. In a large bowl, combine all the dry ingredients.

  3. In a medium bowl, combine all the wet ingredients.

  4. Pour the wet ingredients into the dry ingredients and mix well.

  5. Chop the baking chocolate into chunks, or as small/large as you want them.

  6. Add the chopped baking chocolate to the cookie batter and mix well.

  7. Drop cookie batter by the tablespoonful onto the prepared baking sheet.

  8. Bake cookies for 10-12 minutes until the edges are slightly crispy.
