Hey! Welcome to my first recipe ever on The Gut Healing Ninja!

Here you can expect simple, gut friendly recipes, without a lot of frills (which translates into not taking a lot of time).

So, I'm super excited to introduce to you my recipe for Honey Graham Cracker Cookies!

This recipe came about when I was experimenting with some new-to-me Paleo flours, cassava and tigernut.

Since my experimentation, I've fallen in love with tigernut flour's rich nutty taste, plus its full of prebiotics to help support those good gut bugs!

Here's why I love tigernut flour:
1. It's actually not a nut, it's a root, so totally allergy friendly.
2. It's stuffed full of gut-friendly prebiotic fiber.
3. It's a good source of plant protein.
4. It tastes amazing and makes the best cookies.

Another key player in this cookie recipe is the almond flour (so sorry for anyone avoiding nuts, but I had to!)

I've experimented with several different brands of almond flour, and hands down this one by Blue Diamond is the best. It's just so fine and powdery, it makes the fluffiest cookies!

But, back to the cookies.

These things are seriously amazing!

And they totally remind me of those honey graham crackers I used to have as a kid. I would dunk them in milk or eat them with cream cheese, yum, so good!

These cookies have that same honey undertone, but are super fluffy and a little bit chewy, and the perfect texture for (almond) milk dunking.

Honey Graham Cracker Cookies
Remember those honey graham crackers you ate when you were a kid? Yes, those ones that would turn oh so soft and magical when you dipped them in milk? Well, here is a Paleo (and way healthier) version that will transport you back to those days.
  • 1/2 cup Honey
  • 1/4 cup Avocado Oil
  • 1/2 tsp Apple Cider Vinegar
  • 1 tbs Vanilla Extract
  • 1 Egg
  • 1/4 tsp Baking Soda
  • 1/2 cup Almond Flour
  • 1/2 cup Tigernut Flour
  • 1/4 cup Cassava Flour
  • 1/4 tsp Salt
1. Preheat oven to 350F.2. Add all ingredients to a large bowl.3. Wisk together until fully combined and fluffy.4. Place spoonfulls of dough onto baking sheet lined with parchment paper.5. Bake for 15 minutes or until slightly crispy on the edges.
